Chicken & Pasta

Carefully pour the excess oil out of the pan.Add the cooked pasta and tomatoes.
Let it simmer for 2-3 minutes on a low heat.
Tip: You can add any other vegetables you like!
Lentil Soup
Ingredients:
3 carrots, 1 onion, 1/4 turnip, 170g lentils and 2 ham or chicken stock cubes.

Step Three - Once bubbling reduce the heat and allow to simmer for 30 minutes, stirring occassionally.

Step Four
The soup is then ready for serving!
Tip: You can store the soup in the fridge for 2-3 days or even freeze it for future use!
Chicken Stir-Fry
Ingredients:
1 or 2 chicken breasts; a selection of vegetables such as peppers, cabbage, beansprouts, carrots, onion and mushrooms; olive oil or sunflower oil; stir-fry seasoning; soy sauce.

Step Five - add the cooked chicken back into the pan and add seasoning according to the directions of the jar.
Step Six - Season with Soy Sauce to taste.
Tip: You can replace chicken with pork or beef. You could also add cooked noodles to make a more filling meal.
Cottage Pie
Ingredients:
1 tablespoon of oil
1 large onion chopped
2 medium carrots chopped
560g beef mince
400g/14oz can tomatoes
290ml/10fl oz beef stock
2 tablespoons of tomato puree
salt and pepper
For the topping: Potatoes, 75g butter and 55ml milk
What to Do:
- Preheat the oven to 190C/375F
- Heat the oil in a large pan. Add the onion and carrots and cook over a medium heat for 5 minutes until soft.
- Add the minced beef and cook for 3 minutes until brown.
- Add the tomatoes, beef stock and tomato puree.
- Cover and simmer for 30 minutes.
- Season to taste.
- Make the Mash
Boil the potatos in water until soft.
- Drain and mash with the butter and milk.
- Season with salt and pepper.
- Spoon the meat into an oven proof dish. Top with mash and bake for 30 minutes until golden brown.
Tip: if you want add some grated cheese to make the mash cheesy!
Tagliatelle Carbonara (For 4 people)
Ingredients:
- 500g spaghetti (the whole packet)
- 125g smoked bacon, cooked and finely chopped (if you're a vegetarian just miss this out)
- 150g parmesan cheese, grated
- quarter pint Double Cream
- 1 egg, beaten
- 1 garlic glove, crushed
-salt and pepper to taste
What to do:
It will tell you on the pack of Spaghetti how to cook it in boiling water.
Whisk the egg and cream together.
Add the bacon, garlic and cheese.
Mix together the drained cooked spaghetti. The heat of the spaghetti will cook the egg.
Macaroni Cheese (From the BBC Website)
Ingredients
250g/9oz macaroni
40g/1½oz butter
40g/1½ plain flour
600ml/1pint 1½fl oz milk
250g/9oz grated cheddar
50g/2oz grated Parmesan
What To Do:
1. Cook the macaroni in a large saucepan of boiling salted water for 8-10 minutes; drain well and set aside.
2. Melt the butter over a medium heat in a saucepan slightly larger than that used for the macaroni. Add the flour and stir to form a roux, cooking for a few minutes.
3. Gradually whisk in the milk, a little at a time. Cook for 10-15 minutes to a thickened and smooth sauce.
4. Meanwhile, preheat the grill to hot.
5. Remove the sauce from the hob, add 175g/6oz of the cheese and stir until the cheese is well combined and melted.
6. Add the macaroni to the sauce and mix well. Transfer to a deep suitably-sized ovenproof dish.
7. Sprinkle over the remaining cheddar and the Parmesan and place the dish under the hot grill. Cook until the cheese is browned and bubbling. Serve straightaway.
